Spiedie: original American food unknown to most, loved by those who have tried it. Spiedies (pronounced “spee-dees”) come from the Binghamton area in south central NY State. SPIEDIE FEST brings in hundreds of thousands of people for the food and hot air balloon show, oh, and the obligatory washed up rock band concerts. Good food. Fun place. Nice little festival.

Sweet cornbread:

1 cup cornmeal
1 cup flour
1/2 tsp salt
2/3 cup sugar
4 tsp baking powder
1/2 cup melted butter
2 eggs
1 cup milk

Combine the flour, cornmeal, sugar, salt, and baking powder in a large bowl. Mix well.

In a smaller bowl, mix the milk and butter, then two eggs. Add the wet ingredients to the dry ingredients. Mix, but do not overblend. Mix until lumps are gone.

Bake in an 8″ square pan an bake until golden and a toothpick in the center comes out clean. This takes 20-30 minutes. We serve this with butter and honey.

Zucchini bread

This is *sweet, not savory 🙂

1 ½ cups all-purpose flour

1 teaspoon ground cinnamon

½ teaspoon baking soda

¼ teaspoon salt

¼ teaspoon baking powder

¼ teaspoon ground nutmeg

1 cup sugar

1 cup finely shredded unpeeled zucchini

¼ cup cooking oil

1 egg

¼ teaspoon finely shredded lemon peel

½ cup chopped walnuts

In a mixing bowl combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg. In another mixing bowl combine sugar, shredded courgette, cooking oil, egg, and lemon peel; mix well. Add flour mixture; stir just till combined. Stir in chopped walnuts. Pour batter into a greased 8 X 4 X 2-inch loaf pan. Bake in a 350° oven for 55 to 60 minutes or till a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove bread from the pan; cool thoroughly on a wire rack. Wrap and store overnight before slicing. 1 loaf.

Brownies

1 cup butter or margarine

2 cups sugar

2 teaspoons vanilla extract

4 eggs

1 cup all-purpose flour

¾ cup cocoa

½ teaspoon baking powder

¼ teaspoon salt

1 cup chopped nuts (optional)

Heat oven to 350°. Grease 13 X 9 X 2-inch baking pan. Microwave butter in large bowl at high 2minutes or until melted. Stir in sugar and vanilla. Add eggs, one at a time, beating well with a spoon after each addition. Add flour, cocoa, baking powder and salt; beat until well blended. Stir in nuts, in desired. Pour into pan. Bake brownies 30-35mn or until brownies begin to pull away from sides of pan. Cool completely. About 36 brownies.

Chocolate chip cookies

2 ¼ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup butter, softened

¾ cup granulated sugar

¾ cup packed light brown sugar

1 teaspoon vanilla extract

2 eggs

2 cups semi-sweet chocolate chips

1 cup chopped nuts (optional)

Heat oven to 375°. Stir together flour, baking soda and salt. In large bowl, beat butter, granulated sugar, brown sugar and vanilla with electric mixer until creamy. Add eggs; beat well. Gradually beat in flour mixture. Stir in chocolate chips and nuts, if desired. Drop by rounded teaspoons onto ungreased cookie sheet. Bake 8 to 10mn or until lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. About 5 dozen cookies. Pan recipe: Spread batter in greased 15 ½ X 10 ½ X 1-inch jelly-roll pan. Bake at 375° 20mn or until lightly browned. Cool completely; cut into bars. About 4 dozen bars. Chocolate chocolate chip: Simply add 1/3 cup cocoa to your favourite chocolate chip cookie recipe.

Peanut butter cookies

½ cup margarine or butter

½ cup peanut butter

1 ¼ cups all-purpose flour

½ cup sugar

½ cup packed brown sugar or ¼ cup honey

1 egg

½ teaspoon baking soda

½ teaspoon baking powder

½ teaspoon vanilla sugar

In a mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add ½ cup of the flour, the sugars, egg, baking soda, baking powder and vanilla. Beat till thoroughly combined. Beat in remaining flour. If necessary, cover and chill dough till easy to handle.

Shape dough into 1-inch balls. If desired, roll in additional sugar. Place 2 inches apart on an ungreased cookie sheet. Flatten by crisscrossing with the tines of a fork. Bake in a 375° oven for 7 to 9 minutes or till bottoms are lightly browned. Cool cookies on a wire rack. Makes about 36.

Cowboy caviar:

1 each, red, yellow and green pepper, diced
3 roma tomatoes, diced
1 can corn, drained
1 can black beans, rinsed and drained
1 avocado, diced and spritzed with lime juice
1 bunch green onions, chopped
garlic, salt, pepper to taste
1 tbsp olive oil
2 tbsp red wine vinegar
Mix all together and serve with corn chips. Also good over grilled fish and chicken.
Note: If you are making a day ahead, add avocado just before serving

O’Henry Bars

2/3 cup butter
1/2 cup white corn syrup
1 teaspoon vanilla
3/4 cup brown sugar
4 cups quick-cooking oatmeal
one 6-ounce package chocolate chips
2/3 cup peanut butter (My son has a nut allergy so we use sunflower seed butter – just as good!)
Mix together the first 4 ingredients. Blend in oatmeal and press mixture into well-
greased 9-inch-by-13-inch pan. Bake 18 minutes to 20 minutes at 350 degrees. (Make
sure that the mixture bubbles but does not cook too long around the edges.) Melt
chocolate chips and peanut butter together. While cookie mixture is still warm, frost with
melted chips-and-peanut-butter mixture. Cool. Cut into bars.
Note: I use a piece of wax paper to spread the thick and sticky dough into the pan.

Random Malaysian Food Facts

Teh Tarik: Malaysians love to drink this at tea time. By pouring it like this, the tea cools down and has the perfect drinking temperature with a foamy layer at the top. We rarely drink tea without milk. You can also buy ready-made ones like this in the supermarket.

Banana leaf meal: the plate is a clean banana leaf. You get rice and they will bring all different vegetable and curries to the table to offer you. Although traditionally eaten with the right hand; I ate it with a spoon in the right hand and fork in the left.

Pineapple slushy: cut the fresh pineapple into small pieces and put them in the freezer for 1 day. The next day. Blend it with white tea and honey. Just enough to blend them all. You can put ice if you don’t freeze them.

 

 

 

 

Agnessa

The traditional desserts in Bulgaria are mostly the same as in the Middle East – baklava and other sweets with sugar syrup. We also have some other very typical sweets: This cake is called Agnessa, it is yummy and very easy to make. This recipe is from one Bulgarian lady’s aunt.

Ingredients

  • 200 g butter
  • 1 cup + 1 cup powdered sugar
  • 1 cup all-purpose flour
  • 1 cup ground walnuts
  • 4 eggs
  • 1 vanilla sugar

Method

You mix the butter, flour, walnuts and 1 cup of the powdered sugar. You whisk the egg whites and add them to the mixture. Spread in a pan and bake for about 20 min at 180 degrees Celsius.

In the meantime beat the yolks with the other cup of sugar and the vanilla sugar until white. My aunt makes it always with a wooden spoon for a long time (while watching TV for example :)).

Take the cake out of the oven and while it is still warm spread the eggs on top. Leave overnight for the glazing to dry. If you are in a hurry put in the oven at 50 degrees Celsius until dry.

Baba’s Banitsa

This is the recipe of one Bulgarian lady’s great-grandmother’s Banitsa

You take dough and make it really thin(1-2 mm) or if you can’t you can buy one from the shop. It has to be flexible and moldable like dough, not like hard pasta or lasagna. Filo pastry works well!

Ingredients

  • 1 dough (for example filo pastry)

Filing

  • 5 eggs
  • 500g Bulgarian or greek (Feta) cheese
  • 500g or 1 big Bulgarian yogurt or greek one
  • 1 tea spoon of baking soda(powder)
  • You mix the baking powder with the yogurt.

Method

Mix all ingredients for the filling.

Take one sheet and put a soup spoon filled with oil and you spread it even, then a few spoons of the filling and spread it even. Then you roll the sheet and it resembles a long snake. Then put it on the baking tray like a spiral in the center. The baking tray should be round and have oil or flour on the bottom. Continue to do this with every single sheet or until the tray is full. Then you bake it at 200C for 30-40 minutes. That’s it!

Variations

The filling can be altered in many ways. Spinach, onions, meat, anything goes. There are also sweet versions; the most popular is with apple, cinnamon and walnuts filling or with pumpkins and cinnamon.

Kanelbullar (cinnamon rolls)

cinnamonrollsIngredients

150g butter
5 dl milk
50g yeast (fresh if you use dry mix it in the flour and keep the butter/milk a little bit warmer)
1 dl sugar
2 tea spoons cardamom
about 800g flour

Filling
2 table spoons cinnamon
150g butter
1dl sugar

Icing

1 egg
coarse sugar /decorating sugar

Method

Melt the butter. Pour in the milk and heat to 37 degrees Celsius (finger warm). Add the sugar and cardamom.

Crumble the yeast and pour the milk/butter over in small amounts at the time so the yeast dissolves. And then slowly add the flour while mixing until you get a nice dough.

Let it rest and prove it for about 30 min.

Knead the dough, split in two and roll out to a square a few milimetres thick. Mix the filling and spread out evenly on top of the dough. Roll and cut it in about 1,5 cm thick pieces.

Let them rest again for about 40 min. Brush with egg and sprinkle on the sugar. Bake in the oven for about 5-10 min on 225 degrees Celsius.

Gateu au Yaourt

It is so simple and great to make with kids as all the measuring takes place with a yoghurt carton….

Ingredients

1 pot of yoghurt (the regular small pot of natural yoghurt (125g) but you can also use a flavoured yoghurt, apricot or peach works very well)
2 pots of sugar
3 pots of self raising flour (if you prefer to use plain flour, that is fine too but you will need to use 2 teaspoons of baking powder)
1/2 (half) pot of oil (sunflower or similar – not olive)
2-3 eggs
a pinch of salt

Method

Place the yoghurt in a bowl, you use the empty yoghurt carton to measure out the other ingredients. Mix everything together. Place in a loaf tin or round tin, whatever you prefer. Bake in oven 180° celsius for 30 minutes.

The great thing is if you use natural yoghurt, you can vary the flavour by adding lemon or orange rind to the mixture, you can also add some cut up apples or basically anything you like to the mixture.

Braised Pork Rice

Braised Pork Rice is Taiwan’s signature dish. You can add a sunny side up egg or stewed/tea eggs on top. (Recipe provided by Jasmine L)

Cooking ingredients
1kg pork, chopped into 5mm square chunks. Pork belly is the best which contains more fat, but if you prefer to have a more healthy dish, less fatty parts of the pork also can do
– 100ml soy sauce, 50ml dark soy sauce (optional – dark soy sauce mainly help get colour on the meat)
– 20g rock sugar or any type of sugar
– 1 onion, finely chopped
– 3-4 shallots, finely chopped
– 2 star anise
– 5g five spice powder
– 2 garlic, finely chopped
– 50ml rice wine

The method

1. add some oil to a frying pan, stir fir onion, shallot and garlic till a bit brown
2. add pork chunks, if not much fat on the meat then you can use a little lard to avoid the meat get too dry
3. when water gone from the meat and it’s browned, add sugar, aniseed, 5 spice and rice wine
7. cover and steam the food for about 5 minutes, turn the heat to medium
8. add some hot water until just covering the food
9. slow cook for 20mins, then it’s ready to serve with rice.

You can add more sugar or soy sauce or even anything your taste.
