Spiedie: original American food unknown to most, loved by those who have tried it. Spiedies (pronounced “spee-dees”) come from the Binghamton area in south central NY State. SPIEDIE FEST brings in hundreds of thousands of people for the food and hot air balloon show, oh, and the obligatory washed up rock band concerts. Good food. Fun place. Nice little festival.

Sweet cornbread:

1 cup cornmeal
1 cup flour
1/2 tsp salt
2/3 cup sugar
4 tsp baking powder
1/2 cup melted butter
2 eggs
1 cup milk

Combine the flour, cornmeal, sugar, salt, and baking powder in a large bowl. Mix well.

In a smaller bowl, mix the milk and butter, then two eggs. Add the wet ingredients to the dry ingredients. Mix, but do not overblend. Mix until lumps are gone.

Bake in an 8″ square pan an bake until golden and a toothpick in the center comes out clean. This takes 20-30 minutes. We serve this with butter and honey.

Zucchini bread

This is *sweet, not savory 🙂

1 ½ cups all-purpose flour

1 teaspoon ground cinnamon

½ teaspoon baking soda

¼ teaspoon salt

¼ teaspoon baking powder

¼ teaspoon ground nutmeg

1 cup sugar

1 cup finely shredded unpeeled zucchini

¼ cup cooking oil

1 egg

¼ teaspoon finely shredded lemon peel

½ cup chopped walnuts

In a mixing bowl combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg. In another mixing bowl combine sugar, shredded courgette, cooking oil, egg, and lemon peel; mix well. Add flour mixture; stir just till combined. Stir in chopped walnuts. Pour batter into a greased 8 X 4 X 2-inch loaf pan. Bake in a 350° oven for 55 to 60 minutes or till a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove bread from the pan; cool thoroughly on a wire rack. Wrap and store overnight before slicing. 1 loaf.


1 cup butter or margarine

2 cups sugar

2 teaspoons vanilla extract

4 eggs

1 cup all-purpose flour

¾ cup cocoa

½ teaspoon baking powder

¼ teaspoon salt

1 cup chopped nuts (optional)

Heat oven to 350°. Grease 13 X 9 X 2-inch baking pan. Microwave butter in large bowl at high 2minutes or until melted. Stir in sugar and vanilla. Add eggs, one at a time, beating well with a spoon after each addition. Add flour, cocoa, baking powder and salt; beat until well blended. Stir in nuts, in desired. Pour into pan. Bake brownies 30-35mn or until brownies begin to pull away from sides of pan. Cool completely. About 36 brownies.

Chocolate chip cookies

2 ¼ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup butter, softened

¾ cup granulated sugar

¾ cup packed light brown sugar

1 teaspoon vanilla extract

2 eggs

2 cups semi-sweet chocolate chips

1 cup chopped nuts (optional)

Heat oven to 375°. Stir together flour, baking soda and salt. In large bowl, beat butter, granulated sugar, brown sugar and vanilla with electric mixer until creamy. Add eggs; beat well. Gradually beat in flour mixture. Stir in chocolate chips and nuts, if desired. Drop by rounded teaspoons onto ungreased cookie sheet. Bake 8 to 10mn or until lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. About 5 dozen cookies. Pan recipe: Spread batter in greased 15 ½ X 10 ½ X 1-inch jelly-roll pan. Bake at 375° 20mn or until lightly browned. Cool completely; cut into bars. About 4 dozen bars. Chocolate chocolate chip: Simply add 1/3 cup cocoa to your favourite chocolate chip cookie recipe.

Peanut butter cookies

½ cup margarine or butter

½ cup peanut butter

1 ¼ cups all-purpose flour

½ cup sugar

½ cup packed brown sugar or ¼ cup honey

1 egg

½ teaspoon baking soda

½ teaspoon baking powder

½ teaspoon vanilla sugar

In a mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add ½ cup of the flour, the sugars, egg, baking soda, baking powder and vanilla. Beat till thoroughly combined. Beat in remaining flour. If necessary, cover and chill dough till easy to handle.

Shape dough into 1-inch balls. If desired, roll in additional sugar. Place 2 inches apart on an ungreased cookie sheet. Flatten by crisscrossing with the tines of a fork. Bake in a 375° oven for 7 to 9 minutes or till bottoms are lightly browned. Cool cookies on a wire rack. Makes about 36.

Cowboy caviar:

1 each, red, yellow and green pepper, diced
3 roma tomatoes, diced
1 can corn, drained
1 can black beans, rinsed and drained
1 avocado, diced and spritzed with lime juice
1 bunch green onions, chopped
garlic, salt, pepper to taste
1 tbsp olive oil
2 tbsp red wine vinegar
Mix all together and serve with corn chips. Also good over grilled fish and chicken.
Note: If you are making a day ahead, add avocado just before serving

O’Henry Bars

2/3 cup butter
1/2 cup white corn syrup
1 teaspoon vanilla
3/4 cup brown sugar
4 cups quick-cooking oatmeal
one 6-ounce package chocolate chips
2/3 cup peanut butter (My son has a nut allergy so we use sunflower seed butter – just as good!)
Mix together the first 4 ingredients. Blend in oatmeal and press mixture into well-
greased 9-inch-by-13-inch pan. Bake 18 minutes to 20 minutes at 350 degrees. (Make
sure that the mixture bubbles but does not cook too long around the edges.) Melt
chocolate chips and peanut butter together. While cookie mixture is still warm, frost with
melted chips-and-peanut-butter mixture. Cool. Cut into bars.
Note: I use a piece of wax paper to spread the thick and sticky dough into the pan.


Random Malaysian Food Facts

Teh Tarik: Malaysians love to drink this at tea time. By pouring it like this, the tea cools down and has the perfect drinking temperature with a foamy layer at the top. We rarely drink tea without milk. You can also buy ready-made ones like this in the supermarket.

Banana leaf meal: the plate is a clean banana leaf. You get rice and they will bring all different vegetable and curries to the table to offer you. Although traditionally eaten with the right hand; I ate it with a spoon in the right hand and fork in the left.

Pineapple slushy: cut the fresh pineapple into small pieces and put them in the freezer for 1 day. The next day. Blend it with white tea and honey. Just enough to blend them all. You can put ice if you don’t freeze them.
